So I was racking my American wheat this morning and looked away for a second and lost my siphon with a gallon to go. I already added all of my priming sugar so if I bottle the four gallons I have I'm going to end up at about 3 vols instead of the intended 2.6. Aside from being overcarbed I'm also worried about bottle bombs.

Should I just bottle as is? Any ideas for getting that last gallon without getting any sediment or dryhops?

If you bottle now you it will be fine. I've bottled a batch at 4 volumes no problem. What always do to insure I never pick up any trub is by putting a nylon bag that I used to use for biab over my auto syphon. If you get a little bit of trub in the bottles it's really not a big deal either. I'd feather have a little more sediment in the bottles versus over carbed beer.
