Hello team
I picked up 5 gallons of unpasteurized cider from a small orchard in RI and I plan on fermenting spontaneously. Some sources say make a starter with apple skins but I was hoping to just fill a carboy and let go for a week. If I see no signs of fermentation I will have some white wine yeast on hand so I don't end up with 5 gallons of vinegar.
Any advice?
 
I've done just what you plan on doing, mine typically turn out super dry. I just put it in a cool place and let it do its thing.
 
Give it at least 2-3 days after filling the fermentor. If you haven't got fermentation by then, use the wine yeast.
