Munich based Bock???

What do you guys think about this recipe for a Munich Dunkel?
This will be my first AG batch!

Munich Dunkle Ale

5 Gallons

Munich Malt (Dark) 12 lbs
Pilsener/Two-row 1 lb
Crystal Malt (90-120L) 2 lbs


1 oz Spalter 60 min
1 oz Spalter 15 min

1 tsp Irish Moss 15 min

WLP029 German Ale/Kolsch Yeast

Edit: Edited for final recipe

I know traditionally this is a lagered beer but I don't have the resources for lagering.

Any comments, suggestions, heckles?

I must say this coming along great for my first all grain.

I edited the recipe a little. Decided to leave out the chocolate malt and I used White Labs yeast WLP029 German Ale/Kolsh.

All grain really is the way to go if you have the time and enjoy the whole process. If you enjoy spending time in the kitchen cooking exceptional meals you will love all grain!

I'm almost finished with the boil, I've got my hopes up for this one, wish me luck! :D
