Hello,

I just read the directions on my Wyeast packet that said to let swell for 3 hours or more.

My problem is that I read this with 60 minutes left on my boil. I assume that the 3 hour number is very conservative and I'll be fine but I'd like to get some reassurance from you fine folk.

Yea, you are good. By the time you finish boil and cool, it will be at least an hour and half. Just smack the pack now. You will be fine.

I did a late LME addition at 15 minutes...but 15 minutes later i'm not back up to a rolling boil.

Do I add boil time or consider it done?
