My sister has asked me to make a Mead for her. I'll be visiting her in a couple months, and would like to have something ready to deliver to her then, if she has to let it sit for a bit, well, that's her problem. I have no idea if I can make for her what she wants - here's what she says:
1. Not too dry, not too sweet.
2. Prefers sparkling.
3. ABV in the wine range, not in the session range.
4. Flavored is ok - she suggested apple, peach, cinnamon, not ginger.
I have made Mead, probably not well, but concentrate on ales - I've found I don't care for meads or ciders very much, so I can't really recall a good one vs. a bad one.
All that said, is there a recipe anyone can recommend based on the above criteria? I'm not sure I can reconcile points 1 and 2 above since I'll be bottling for her and don't care to heat sterilize. I'm considering making the BOMM recipe on this forum, but would make something else if it had good reviews.
