"mashing" sweet potatoes

This year I'm putting my brew "science" knowledge to work in my Thanksgiving preparation... I'm "mashing" my sweet potatoes... I don't mean smashing, I mean holding them at mash temperature (~65C) for 30 min before boiling. I guess sweet Potatoes have enough diastatic power to convert themselves. Makes the sweet potatoes all the more sweet.

Anyone else incorporating brew knowledge in their Thanksgiving?
 
I did not do anything special.

But did you notice any difference in the sweet potatoes?
 
Yes I believe so, I usually add a bit of sugar and make a sweet potato casserole... I used far less sugar than I usually do and it tasted just as sweet as I remembered. Of course this could be a bias on my part... Nevertheless it was fun!

What did you do with the water? I’m guessing you could throw it in a stout or something?
