I've recently got into sous vide cooking with my direct fired rims system. I can't believe I've never thought of it before because it's great I just use a false bottom to keep the bag off the bottom... It'd work better with a herms or rims tube.. but it's still awesome.
Anyway, I'm thinking of doing a whole chicken this weekend but I'm not sure about letting my March 809 pump run for 6+ hours. Thoughts?
