preferably all extract, i'm experienced with partial mash and don't mind those either, but i prefer the ease with extracts. I appreciate any recommendations, we were going to brew a rasberry wheat hefeweizen but supplies are out of stock. With that said, we were feeling a certain zeal over experimenting with fruit additives and a if that is popular with Pale Ales we would like recommendations for that as well.

Take a look at Mild recipes, if you want to add fruit. If you just want a beer with a lower hop aroma, Bitters.
 
I would recommend Edwort's Haus Pale Ale Partial. This beer is very easy to do as a PM using a smaller pot/ oven method. HPA is easy to brew and is a great less hoppy pale ale. It's also cheap to brew!
