Well, I just cracked a Banshee's Brother that I bottled up back in February as a St Patrick's Day batch for a party that I was going to. Naturlich, I saved a bunch for my private stock. I have not touched them since 3/17, and just cracked one open today. The clarity is amazing, the head is nice and creamy, and the taste has mellowed out great, if not a little too roasty. I am thinking of making a minimum aging time for all my brews before I crack them. If I could only have that kind of self control!
 
I second that. I rushed a couple batches for a party I had, but other than that, I always try to keep my mitts off the beer for at least a month, even then, I'll hold back the better part of a case for 9 months to a year. The BIG beers like the spiced strong english ale are incredible after aging.
