I know bentonite is used for clearing but will it kill yeast and stop fermentation? Cheers
 
you need campden tablets and potassium sorbate to stop the yeast, not bentonite

This will stop them from reproducing as well as suspend activity (which is plenty for what you need). You can chill kill them by bringing them to near freezing temperatures.. (~23 F would be freezing temp for wine if I remember correctly) for a week or so.
 
bentonite traps sediment and sinks it to the bottom of your container...I dont see the point in using it in an active ferment but if you did add some I doubt it will cause any harm...its usually added after fermentation stops to clear out all the floaties...
