Brewed a very simple extract batch last night just to make use of some Key Limes I picked up in the Keys last weekend. Basically used various containers of ingredients I had laying around.
2.? Lbs Wheat DME
1.? Lbs Light DME
1.? Lbs Light LME
2.? oz Corn Sugar
.25oz Columbus 18.2% (60min)
.25oz Columbus 18.2% (Flame out)
Zest from 1 pound bag of Key Limes (Flame out)
OG - 1.038
Pitched 1 pack of US-05 directly into the carboy @ 72 Degrees and set my controller to 65. About 20 hours later i'm noticing close to no activity from the blowoff tube. I've never brewed a beer with such a low OG nor have i ever used dry yeast. My plan is not to worry, take a gravity reading in a few days and take it from there but would be nice to hear some input. I've read arguments both ways whether to pitch directly with us05 or rehydrate and what ideal pitch temps are for dry yeast so who knows....
