juice extraction - apples and quince

Hi,

As a fruit very rich in tanin I thought of adding some quince juice to the apples juice before fermentation.

have any body used quince in this way from before? also it is extremely difficult to extract juice from quince, I understood that there is an enzyme that can be used to break the pectine and starches (I think it is called pictinase) and thus help extract more juice from the quince.
Any body knows where I can get such an Enzyme in good quantities?
 
You can buy pectic enzyme/pectinase at most homebrew supply stores or at a number of online vendors. It's not usually used by most amateurs to increase juice yields, but rather as a clearing agent to improve appearance.

In your case, you want to crush the fruit, add the pectic enzyme, mix thoroughly, wait a few hours, then press the fruit to extract the juice.
