Here's an old topic www.homebrewtalk.com/forum/threads/guide-to-set-internal-chest-freezer-thermostat-to-32f-eliminate-external-control.249612/ that explains how to use the existing freezer temperature controller to control the temperature vs. using and external (ex. STC-1000). Is anyone here using the internal method and if so how is it working out?
I didn't get past the first paragraph in the link. I know you asked about folks using internal control, but the external temp controller cost me $23 in parts, and three or so hours in assembly. That isn't exactly cost prohibitive.

Just use BrewPi and never look back! It is amazing.
