I have a 10 day old single gallon of black IPA going at the moment. The air lock has not been releasing gas (as far as I can tell) for about 4 or 5 days now. Can I go ahead and bottle it, leaving it to condition in-bottle for a while, or do I need to leave it in primary for a while longer?

Thanks!

Standard Answer: When it's done fermenting. How do you know this? Take a gravity reading. Airlock activity means nothing more than excess gas escaping. If you get two gravity readings that are the same over 3 days you know the beer is done fermenting. Ideally then you add 1 week to allow the yeast to clean up and clear the beer and then you package.
