How long can you wait to pitch yeast?

The conditions of the storage are the key. The Aussies store wort in plastic containers for months. However, the plastic container is flexible and they put the wort in boiling hot, squeeze out all the air, and the work keeps because the hot wort has pasteurized the container and the exclusion of the air has kept all the bacteria out.
 
What would happen to the beer if I waited up to two weeks to pitch yeast?
It'd either go bad or stay good. Can't say much for certain as we don't know whether you are taking all the precautions and procedures used by the makers of LME or whether your sanitation and cleanliness habits for you and your surroundings are like some of the restaurants around me that I refuse to ever eat at.
