I prefer 5 year old dutch farmer's cheese on my pasta, it's too hard to get actually good parmesan for a reasonable price.

I know I'm spoiled on good parmesan. My wife works in the dairy industry and, if she wanted to shake things up, could probably get a job as a grader in a week.

We splurge and make having at least decent parmesan on hand a priority when we're at the grocery store. I think she managed to get some wedges of good Italian parmesan from work a couple times.

the good stuff is called "brokkelkaas" but it doesn't get exported out of the netherlands much.
