im trying to brew a recipe for a s’mores beer that has good graham cracker and chocolate flavor for a competition. I’m not worried about marshmallow flavor as I will add a toasted marshmallow to each glass. Chocolate should be relatively easy with chocolate malt and cocoa nibs but there seems to be a lot of disagreement about graham flavor. I was thinking of using Weyermann German Pilsner as a base malt. Any other ideas?

Salt. It will set off the chocolate flavours. Maybe cinnamon and/or molasses too.

Midwest Supplies sells a graham cracker extract made by Silver Cloud, go easy with it, a little bit goes a long way
