Need some help with a lighter beer recipe. I have a party coming up and wanted to make a beer for the BMC crowd which is my entire family.

I have on hand 6lbs of Extra Pale DME
1 lb of Carapils
1lb of Crystal 40
10lbs Amber DME
Warrior, Simcoe, and Cascade hops.

I will use WLP001 ale yeast that I stole from a starter last Saturday.

I am thinking of something like this

3 Gallon boil
5 Gallon Batch

6LB Extra Pale DME
1lb Carapils steeped at 155* for 20 minutes

Maybe a 35 minute boil
.25 oz Warrior for 35 min
.5 oz Simcoe at 15 min
1 oz Cascade at 5 min

SMR around 3.4 and IBU's at about 18.

Any suggestions?
 
I'd probably save the simcoe for something else and just do the cascade at 10. also ferment on the cool side of 001 if you can and lager the beer for several weeks if possible

I agree totally on the hops, that's quite a bit for the BMC crowd. Anyway I see no reason not to sneak in at least 2 ounces of some C40 too. I do a blonde ale (or lager depending on which mood I'm in) with a very similar recipe.
