Help with Lemon Lime Hefe

I have been interested in brewing SD Slims Lemon Lime Hefe for a while. However right now I am only set up for partial boils. Would doing a partial and topping off work okay? Also if brewing a Hefe are there any steeping grains that would benefit this type of brew Recipe is as follows. Thanks for any help.
All Grain
  • 6.25lbs Pale Malt (2 Row)
  • 4lbs White Wheat Malt
  • 1lb Vienna Malt
  • ****Mash 158 for 45 minutes****
  • 0.25 Motueka Hops at 60 Minutes
  • 0.25 Sorachi Ace 20 minutes
  • 0.25 Motueka Hops 20 minutes
  • 0.25 Sorachi Ace 7 Minutes
  • 0.50 Lime Zest 5 Minutes
  • White Labs Hefeweizen IV Ale Yeast
  • ****Start Vigorous Fermentation****
  • After Vigorous Fermentation subsides, add 1.75L Simply Limeade
  • ****Ferment for a minimum of 3 weeks****

Extract
  • 7lbs 12.6 Ounces of Wheat Liquid Extract
  • 10.7 Ounces of Pale Liquid Extract
  • Follow rest of All Grain Recipe
 
Will it work and will it result in beer? Absolutely!

Will it be an enjoyable beer? Maybe (probably) not.

If you can only do partial boils then I would highly suggest brewing in the fashion of a "double batch". This basically means you do as many full brews as you need to fill your carboy/bucket.

Let's look at an example using rounded figures (These numbers may not exactly match your situation but should help):

Say you are looking to brew a 5 gal batch but only have a 3 gal kettle.
Look at the recipe as if you were doing a full volume boil/batch/etc and cut it in half then brew it twice to fill your carboy/bucket.

Say the recipe calls for (Again, may not match exactly. This is an example)-
6 gal total water
1lb steeping grains
6lb of extract
1oz of hops @ 60mins
1oz of hops @ flame out
5.30 gal of wort into your carboy/bucket
5 gal final bottling volume

All you would have to do is look at it in half times two, meaning-
3 gal total water
.5 lb steeping grains
3lb of extract
.5oz of hops @ 60
.5oz of hops @ flame out
2.65 gal of wort into your carboy/bucket
x2 =
5.30 gal of wort total in your carboy/bucket after your double brew
5 gal final bottling volume
