I really want to make a metheglin but I'm unsure of ratios of ingredients and I've had a hard time finding recipes. Can anyone share any recipes they've had success with? I started a 3 gal batch of traditional mead last night so I'm waiting for my rack to secondary to add the spices.

So far I have:
Vanilla Beans
Whole Cloves
Cinnamon Sticks
Whole Allspice
Cocoa Nibs

Below are my suggestions individually:
Vanilla Beans: 1 whole bean per gallon
Whole Cloves: 1-2 depending on your taste and spice potency
Cinnamon Sticks: 1/2 to 1 whole (not powder); this is for Ceylon cinnamon.
Whole Allspice: Varies from 1/2 tsp to 3 tsp depending on what I’m going for.
Cocoa Nibs: Toast right before use. Amount depends on whether you want a hint or lots of chocolate.

When you combine these, you will need to alter concentrations to balance everything. Starting with a tea is a great way to get a ballpark on ratios. Metheglins have so many possibilities. Just play around until you get something you like.
