I make about 50litres of cider a year from my own and other local apples. A Bramley Seedling gives me most apples so I need to reduce acidity, by using 71b yeast and malolactic fermentation. I juice using an electric juicer and press what is left in a table-top press. The juice goes into a variable volume 75l stainless tank which is warmed for the MLF. The final product is mainly bottled, lightly carbonated by priming. I use no sulphite. The cider is appreciated by some, and although others find it too tart, it disappears...

I have also had some success with ice cider and will be making 5l of it this year.
