I brewed the bee cave hefe 1/1/15
The recipe can be found in homebrewtalk I do biab and the only recipe tweak was adding a half pound of each grain to get my OG, no yeast starter too
I hit all the numbers and it fermented about a week ( strong sulfur smell) and I kegged 11 days later ( I fermented at 66 (not ambient temp either!)
I recognize that the sulfur smell is normal with strain but as of today the beer tastes horrible, I get the clove/banana taste but then it quickly turns into a swampy sulfur taste

Any ideas on where I went wrong?

i'm doing a hefe right now but i used the 3333 yeast instead of the 3068 and it just finished fermenting at 68f for 10 days and not an ounce of sulfur smell.

the 3333 says it might make a sulfur smell just like the 3068.

i did however pitch a 1.2 liter starter with no stir plate. just shook it every so often.

not an answer but hope it helps
