i have wyeast 3944 Belgian wit and a pile of grain, anyone got a wit recipe?

0.50 oz Hallertauer [4.80 %] (60 min) Hops 6.9 IBU
0.75 oz Hallertauer [4.80 %] (20 min) Hops 6.3 IBU
0.50 oz Hallertauer [4.80 %] (5 min) Hops 1.4 IBU
0.50 oz Coriander Seed (Boil 5.0 min) Misc
0.50 oz Orange Peel, Bitter (Boil 5.0 min) Misc

Mash at 155 for 60 minutes.....
If you are feeling frisky, try using orange marmelade for your citrus. The sugar in it dries out the beer a little and the citrus flavor is smooth.
I actually used a 3 fruit marmalade last time: orange, grapfruit, lemon. It is fantastic in my BIG winter wit. Also has some chamomile and a touch of cumin in with the spices.
I've done it on a saison cake after I bottled my saison and it was the best beer I have made. I just brewed it again this time using bottle harvested hoegaarden yeast.
how many gallons to your specs?
It's a 5 gallon batch if that's what you are asking.
