Getting into brewing sours soon and am looking at different options for primary fermenters. Secondary will be glass carboys, but was wondering if anyone has used a fusti as a primary. I'd add an airlock to the top and figure it will be easy to rack to secondary vs. using a siphon. My plan is to brew say 10 gallons and split that into 4 2.5 gallon batches with different dregs and/or bugs.

While i realize theres cheaper options out there, I want stainless so it will last for years. View attachment ImageUploadedByHome Brew1419612966.319993.jpg

There are some posts here about these, seems like they'd work fine for primary. Several web pages say they are not ideal for long term storage (including morebeer) but they'd work fine if you just want it for primary.

I'd never heard of these, I'm rather interested! I have several hdpe 15 gal drums that I've used for 10-12 gal batches....but with one of these fusti things i could do a full 15+ gal primary and use my plastic for bulk long term souring. Of course a speidel would be cheaper (plastic doesn't bother me, I'd never make that much clean beer)

I ferment in a modified Fusti (made by Deepwood Brew products). It works great. It's got a threaded port for a thermowell, another for a spigot, and hole for an airlock. It can even pull double duty as a brew kettle. Certainly not as cheap as a bucket or carboy, but as far as stainless steel fermenters go, the Fusti is a comparatively cheap option.

Thanks...I've seen those discussed in other threads I've searched.

Right now I'm actually leaning towards 5 gallon cornys. I will be doing batches no larger than 3 gallons which I'll then transfer with co2 to a 3 gallon carboy. Won't work if i do larger batches obviously so the modified fustis are on my list in case i need them.
