Is there a reference out there that contains fruit and vegetable sugar percentages?

I'm interested in making more non-traditional wines but don't know how much sugar is in whatever I'm harvesting at the moment.

There are a lot of recipes out there already, including things like potato wine, carrot wine, etc. For instance, Terry Geary's book has a few vegetable wines.

Otherwise, get a hydrometer. I recently made a bell pepper and peach wine, and I'm thinking about doing a carrot/apple wine. I read that you can just boil the carrots, then use the water for your wine and the carrots for your soup. Once I boil it, I'm planning on taking a hydrometer to figure out how much sugar I'll need to add.
 
Actually a refractometer is the best instrument for this sort of thing. There are fairly cheap ones on ebay, you only need a drop of liquid to get an instant reading in brix. one that reads sugar from 0-30 brix or therabout would be fine
