Flying fish Hopfish extract clone HELP!!!

Ok let me start by saying I started brewing beer a little over a month ago and I am loving it. Greatest hobby ever. I have brewed three beers so far, one that is ready to drink and two still fermenting, all pre-made recipe kits, but I wanted to take a stab at making my own recipe of one of my favorite beers. A Flying Fish Hopfish IPA, a Jersey craft brewery. Here is what I came up with by from reading there web site. flyingfish.com


7.5lbs light DME
.5lbs German Munich (Northern Brewer)
.5lbs English Medium (Northern Brewer)

1oz Columbus hops
1oz Cascade hops
1oz Palisade hops
2oz Nugget hops
All pellet hops

Safale- American Ale Yeast US-05


5 gallon batch size. /Fermentor
2.5 gallon boil

Steep German Munich and English Medium malt for 30 mins @ 160deg F

Bring to boil and add 7.5lbs of light DME

1oz Columbus @50mins
.5oz Cascade @35mins
.5oz Cascade @25mins
.5oz Palisade @15mins
.5oz Palisade @5mins

Two week primary fermentation
Two week secondary fermentation (dry hp 2oz Nugget)
Two week bottle conditioning

I plugged this recipe into Brewers Friend and the style match came up good. The one thing that is bothering me is Flying Fish list their IBUs around 25 and mine came up closer to 40. I used a hop chart that I have to try and figure what hops would work better for bittering
