Can I add flaked wheat to my partial mash to clear up the beer. It is a red ale

Also. When and how much for a 5 gallon batch

Flaked wheat doesn't clear up a beer- it actually creates a haze in the beer.

It does enhance head retention, though, and that's why it's used. The amount for a 5 gallon batch depends on the rest of the recipe.
