It's time for a nice, refreshing summertime beer and I'd like to brew a good American Wheat beer. I'm looking for a crisp, slightly citrusy and peppery beer that can be easily quaffed. I've never made a wheat beer before; am I on the right track?

August's Twilight (3 Gallons)
OG: 1.050
FG: 1.011
SRM: 4.4
IBU: 16
ABV: 5.0%

Mash at 152

3 lb Pilsner
3 lb Wheat Malt
4 oz Honey Malt

Boil for 90 mins

.15 oz Citra @ 60
.10 oz Sorachi Ace @ 15
.10 oz Citra @ 15
1 gram Grains of Paradise @ 5

Ferment with WLP320 at 64F.

Thanks!

This might be more than "slightly" citrusy. Sorachi Ace, in particular, is pretty potent. You're slightly on the high side of the OG for the style, but the low side for IBU, so it's going to be pretty malty (balanced would be ~24 IBU).

All that being said, this looks good and would make a fine beer. Post your results.
