Ok I just moved my hefe to a keg after 8 days there was no air lock bubbles for about 4 days. I know the air lock isn't the main way to tell for fermentation the hydro is. I smelled it and it was VERY strong bananas.. ok I like :ban::ban: but will this settle down in the keg after a few days weeks? the taste was very strong alcohol but not the tasty kind. the recipe was simple wheat lme 6# boil for 60 min with 1 oz of hops and hefe dry yeast. I know I pitched to high and the ferm temp was about 70-72 you think it will calm down in time?
 
You are still pretty early at 8 days, even for a hefe. It will mellow out in 2 to 3 weeks. The banana smell is probably coming from a combination of the german style hefe yeast (if that is what it was), and possibly a little warm on fermentation.
