First cider question

Hi guys.

Took a stab at my first cider. I'd say so far, so good. Here is the rundown:

5 gallons local pasturized cider

4lbs. brown sugar

White Labs English Cider yeast

Starting gravity 1.065

Gravity now 1.018


Right now it is tasting more like wine/champagne than cider. Any recommendations for enhancing the apple flavor? Whan I backsweeten, will that help? I plan on adding some spice cinnamon, nutmeg, etc. but nothing to over power.

From what I read back sweetening will make it sweeter. I have my first batch in the ferm now. Not sure what the gravity is now. I had a higher SG 1.071 but I used less sugar (1lb cane & 1 lb brown). I must have gotten the extra gravity from my apple juice (sams club-markers mark I think)?

Also, if others could explain how much of the spices to add, that would be great.
