I've had a pale ale bottled for about 7 weeks. I tried it after the initial 3 weeks after bottling and it had a brutal bite. Tasted like crap basically. after letting it sit for 7 weeks i decided tonight to throw one in the fridge to check it out. Seems that the super bitter puntch is almost gone and i can almost enjoy this beer. Anyone had this experience with a pale ale to where it takes about 2 months to even half way taste decent? That strong hop bitterness isn't nice at all.

Bigger beers do better with longer conditioning.

If you want a quick drinking beer, go with a light ale such as Belgian Wit or.

The best your beer will taste will be during that last swallow of that last bottle.

I suspect my 3CPA is going to need a long conditioning time. I generally give my pales three months in the keg, this one is going take longer.
