A false bottom forms a platform with holes so the grain husks can form a filter layer on top of it allowing the wort to flow through to be drained.
 
It helps filtering out . Before I added this false bottom there were times my filter , pump and ball and valve had to be cleared because they plugged. Its amazing how much it helps especially with big hoppy brews.

gotcha'. my 1st guess was that it would help prevent scorching grain on the bottom.
