I have my first 2 all grain batches sitting in secondary - a Kolsch and a Smithwicks clone. They were in primary for 12 days, secondary @ 34 F for 5 days then added gelatin to secondary 7 days ago (so 12 total in secondary).
Gelatin - 1 packet Knox, bloomed in cool water, heated to 170 until dissolved and split between the 2 secondary fermentors.
Within 24 hours, there was a distinct layering that appeared. Clear on top and cloudy below. This is what I expected and figured the gelatin was settling right? The Smithwicks was ahead of the Kolsch by several inches, but again, this is what I expected. I figured I'd give it more time and both beers would be cleared up.
I'm at about 7 days now since adding the gelatin and Smithwicks is cleared up nicely, but Kolsch hasn't move at all since 24 hour mark. I do believe that the cloudy layer is less cloudy but the layering is still very pronounced.
Should I add more gelatin or just be patient? When should I be concerned?
