I have a cyser:

4.5 gallons of store bought apple juice
1.5 gallons of juiced apples
3.5 lbs of honey

I used Lavlin D47

It went from 1.065 to 1.004 in two months (8.3%). I'm pretty sure its done. It's only dropped 2 points in the last 30 days.

I racked it tonight and added sparkloid.

I'm supposed to have this thing ready for October. It has a touch of sharpness to it, but not bad. Am I better off bulk storing this thing in my cellar (72F right now, will drop to the 60s in late August) and bottling in September? Or would it be better to bottle it in the next couple weeks and cold crashing and lagering it a couple months?
 
If it's done then wait for the sparkaloid to clear it and then bottle and lager, opening one every once in a while to check on the flavor mellowing.
 
I'm pretty sure it's done. I'm thinking the only thing that is keeping the FG up is pulp and fiber in suspension from the juiced apples.
