How big have you gone with WLP099.

I plan to max out my MLT with 26 lbs of grain and add other fermentables. I'm not sure how to measure gravity on a mega-brew that may have an OG of 1.200 or better. As an example.....how far do you think 1.200 would come down with WLP099 at around 65 degrees.

In the past I've gotten up to 20% ABV with an FG of 0.995. It was too thin and waaaay too hot; but the yeast got it there without any freezing.

I'm curious how high I can actually go....and gstill get a drinkable ( ok...sip-able) beer....with metrics that I can measure and still have a repeatable process.
