One of the best beers I've had was from Gilligan's Brewery (now on hiatus) in Seattle. They made some sort of chamomile beer that I still dream about to this day. Not sure if it was a pale (doubt it) or something lighter. I also have interest in using rye for my next batch, so I'm going to combine a few ideas here. Tell me what you think!

Batch size: 5.0 gal
Boil volume: 3.0 gal
OG: 1.061
FG: 1.015
Bitterness (IBU): 33.8
Color (SRM): 9.1
ABV: 6.0%

[Grains]
Light LME 3.500lb Extract 38.9%
Light LME 3.500lb Extract 38.9% (late addition)
Crystal 30L 1.000lb Grain 11.1%
Rye Malt 1.000lb Grain 11.1%
Two-row (US) 0.750lb Grain 7.7%

[Hops]
Amarillo 0.75oz 8.0% AA Pellet @ 60 min, 23.9 IBU
Amarillo 0.50oz 8.0% AA Pellet @ 10 min, 3.3 IBU

[Yeast/Other]
American Ale yeast
1.8 oz chamomile flowers added last 10 min of boil.

The IBU's will probably be a tad higher as my LHBS sells a slightly higher AA amarillo. This might mask the chamomile if it's getting too high. Is there a good limit I should look for in terms of IBU's? Any ideas? Possibly a lower AA, and more floral hop?

I'll most likely be making this tomorrow night, so your help is appreciated. :mug:

Thinking about changing the grain bill to:
7lb light LME
.5 lb crystal 20L
.5 lb crystal 40L
2 lb rye
0.5 cara-pils
 
Alright, so I've been trying this over the months (bottled 9/20/11) and it's finally great! It started out way too strong on the chamomile flavor which has now mellowed out. I think the rye balances out the sweet chamomile nicely, however, I plan on editing this and doing it again.

The previous recipe ended up being:
Batch size: 5.0 gal
Boil volume: 3.0 gal
OG: 1.060
FG: 1.019
Bitterness (IBU): 27.2
Color (SRM): 9.1
ABV: 5.5%

[Grains]
Light LME 3.500lb Extract 38.9%
Light LME 3.500lb Extract 38.9% (late addition)
Crystal 20L 0.5lb Grain 11.1%
Carapils 0.5lb
Rye Malt 2.000lb Grain 11.1%

[Hops]
EKG 1.25oz 4.5% AA Pellet @ 60 min,
EKG 1.0 oz 4.5% AA Pellet @ 15 min,

[Yeast/Other]
Slurry from Fremont Brewery (I think it's 1056)
1.8 oz chamomile flowers added last 15 min of boil.

I plan on doing this again, but a little differently (with my new outdoor setup! :ban:)...

Dropping the chamomile to 1oz for 10 min
Switching to all grain with 2-row (keeping the OG the same, FG should be lower too with a mash temp of 150)
Upping the hop amounts but sticking with low AA's. Possibly Saaz

Has anyone tried something like this? You should, because it's a delicious dessert/bedtime beer. :mug:
