Concord 80 quart pot, 5 gal batches?

So this topic kind of fits in two forums but figured here was better. I'm looking at building a 3 vessel bcs system, I will be brewing mostly 5 gallon batches but also the occasional 10. Because 15 isn't enough , I think, for all the strike water you'd need and cuts it close on bk I looked at the 20gal pots as they arent really more expensive. But then I got thinking, is 5 gal.enough to keep the element fully submerged assuming it's installed as low as possible? Anyone do this or.have insight.on if.15 is enough for 10 gal batches?

I have 16 gallon pot that I do 11.5 gallon batches with so I start the boil with 13 gallons

*shameless plug*, but...

With one (or more) of these elements (https://www.homebrewtalk.com/f16/new-heating-elements-perfect-biab-small-batc-bottom-mount-low-profile-521691/ ), I was able to do 2.5 gallon batches in a 25 gallon Concord kettle.

At say 5-6 gallons would your heating element be fully submerged? At 6 inches high I would think it should be?

Yeah, so far I've only done 5g batches. I drilled it so the element center is 1.5" off the bottom iirc. Three gallons will cover it.
