Concord 80 quart pot, 5 gal batches?

So this topic kind of fits in two forums but figured here was better. I'm looking at building a 3 vessel bcs system, I will be brewing mostly 5 gallon batches but also the occasional 10. Because 15 isn't enough , I think, for all the strike water you'd need and cuts it close on bk I looked at the 20gal pots as they arent really more expensive. But then I got thinking, is 5 gal.enough to keep the element fully submerged assuming it's installed as low as possible? Anyone do this or.have insight.on if.15 is enough for 10 gal batches?
 
Yeah, so far I've only done 5g batches. I drilled it so the element center is 1.5" off the bottom iirc. Three gallons will cover it.
