I am fleshing out an idea to minimize the use of ice for my chilling stage. Does anyone use/mix in salt in their ice water to run through a plate chiller? Making ice cream that is how you do it to keep the ice cream chilled during mixing?
 
IMO, the water you might save via this method would be offset by the water you'll need to flush the water side of the plate chiller to remove ALL the traces of salt.
 
My next question is if the salt is thoroughly mixed. This should create little build up on the plates which in turn less rinsing?
