I had the same problem as many others, purchased a mini-fridge because it was too cheap to pass up, but needed to modify it to fit my carboy for a fermentation chamber. I decided against the collar technique or the major extension and went with the smallest extension possible.
Total cost was about $7 for adhesive and insulation. All I did was extend the hinges using it's original holes, "glued/caulked" the insulation to the edge of the fridge, and then glued/caulked the original magnetic sealer to the insulation. So far so good. It hold well enough and insulates and keeps temperatures stable.
