I haven't posted in a while so I thought I would share what I'm doing right now.

I'm brewing a blond ale extract recipe. After it's done fermenting, I will let it sit on top of about 10 lbs of watermelon in the secondary. I sure hope it turns out! Anyone tried brewing a watermelon ale without using watermelon flavor extract?
 
I've seen recipes that call for 6-8 cups of fresh watermelon juice. Never done it myself.

I brew a batch of watermelon wheat at least once a summer. I've settled on 5 cups fresh juice per 5 gal for a what I think is a nice flavor but not too much.
 
Look for DubbelDach's Watermelon Wheat in the recipe section here... Lots of feedback on how to use the watermelon... with and without extract. I'm not a huge wheat beer fan, but I enjoyed this one... In fact, might have to make it again soon.

As I recall, I used about 8 cups of fresh squeezed watermelon juice in secondary.... no extract. Fermentation kicked back up again pretty good. Turned very pink at first bit the color settled into a nice wheat color with only a hint of pink after a few days or so in 2ndary.
