My wife and I made some breakfast sausage this morning. Long story short, we ended up getting a "market hog" about a year ago that weighed about 600 lbs. Since there's just the two of us it's taking awhile to use up that much pork. So we’ve been making sausage out of what's left on the freezer for the last few months.

I boned out about 10 pounds of pork steak and pork chops this morning and ended up with 8 pounds of ground pork. It's seasoned with salt, pepper, brown sugar, sage, thyme, cumin, red pepper flakes and poultry seasoning. Good stuff.

I'm brewing this afternoon. Doesn't get much better.

Thanks for sharing this! I was just looking for a list of spices that can be added to the stuffing for future homemade sausages
