full write-up is here. In a nutshell - this was a $50 find from letgo. No modification to the fridge was necessary (outside of removing ice-maker) - fits a carboy or slim 1/4 barrel as is.

I am running a STC-1000 as a thermostat. I hard-wired the STC-1000 permanently into the wall (unfinished wall).
I am using a reptile heat cable as my heat source.
with a 15W heater, I can heat up 5 gallons of water at a rate of 1 degree F every three hours (haven't decided if this is ok or not).
