Any recommendations for a yeast for a Belgian single? WLP530 (Westmalle), WLP570 (Duvel), WLP500 (Chimay), WLP510 (Orval/Bastogne)? Any idea how they might be different?

they're all differnt in terms of attenuation, flocculation and flavor profile. id say try the pale beers from each brewery if possible and pick the one you like. then look into their fermentation schedule and adapt it to your desired flavors, attenuation etc.

I have had good results with Orval, but that was a mix of dregs and Nottingham

Keep in mind that Orval has Brett in it, you might want to undercarb unless you can store the batch in the fridge after it's carbed.
