Hi

I recently attempted Jamil's Belgian Blonde Recipe from BCS.
Roughly this recipe for 5 gallons

4.8kg weyerman pils
0.22kg melanoiden
0.22kg wheat malt
1pkg or 0.43kg of clear belgian candy syrup.
35g hallertau mittlefru @60min

1 vial wlp550 in a starter


However I used a vial of WLP550, I built an appropriate starter following the directions from yeastcalc.com

I pitched at 17c, and gradually brought the temp up to 22c over the course of a week. I kept everything in the primary for a 21 days.

The brew went from 1.065 - 1.008.

I would have thought that any acetaldehyde would have been cleared up by then.

I've had the beer in my fridge for 4 weeks at 6c and it's not gotten any better.

Wondering if anyone has any ideas, or similar experiences.
