Pretty simple! I'm a beer brewer and have been for about 6 years now. I'm looking for a great how to book on wine making that a beer brewer can pick up and load the knowledge as if it were made for a home brewer's brain.
There is no one great book because wine making is as much an art as it is a science but Pambianchi's book on wine making teaches you the science that undergirds wine making. His work is sound and he is a professional wine maker. Most other trade books are based on myths and pseudo-science or are based on the writer's own very unique experience in wine making which may or may not be idiosyncratic. https://www.amazon.com/dp/1550652362/?tag=skimlinks_replacement-20
