I wanna do just a one gallon batch of cider and wondered if anyone has ever used Lalvin 71B-1122 Narbonne yeast and how it turned out? I was gonna use organic apple juice, 1 pint of honey, .5 to 1 lb of light brown sugar, back sweeten with xylitol, and bottle n carb with coopers carb tabs. I may add some green apple extract at bottling as well.
 
im using the 71B-1122 now in a one gallon batch of mead thats about 2 months old, it seemed to keep alot of residual sweetness which seems good.
