I'm looking to try something a little different. I love traditional pilsners, but I feel like doing something a little different.

Figure something like this:

11# Pilsner
.5# Carapils

30 IBUs Simcoe @ 60
1oz Simcoe @ 15
1oz Simcoe @ 5

Strike at 122*
Decoct to 150*
Decoct to 168*

Probably use Wyeast German Lager yeast.

Ferment at 50 for two weeks, ramp up over 3 days to 72, then crash to 32 for a month, discard the first few ounces and jump to a new keg.

Thoughts on this? I think the piney flavors from Simcoe could work well in this.
 
Looks good, only one way to find out.


True. In between fermentation chambers right now. One is a lagerator, the other isn't complete, so I think this will have to wait until next weekend.
