Using White Labs WLP300 Pure Pitch, manufactured on 6/22/2018; original gravity expected to be 1.056; will ferment at 62º f. I've heard that stressing the yeast can improve results. What do you think?

It's Jamil's recipe...he seems to go out of his way to encourage that temp, for a balance between clove and banana.

You will get mostly clove at that temp. The banana will be very subdued. I ferment my Dunkelweizen at 62-64°, but I like the clove and am not a fan of the banana at all.
