So I used 3056 Bavarian Hefe yeast for the first time. I brewed 10 gals of my hefe two days ago and it has taken off like a jet plane, double blow offs and crazy activity in the carboys. That doesn't concern me, thats just cool to watch, but the smell coming off isn't what I am use to. I typically use 3068 and that has a bready yeasty smell and this time its more sulphery do you know if that is typical or should I just chillax?

Chillax. Sulfur is normal in many yeast strains, including hefe yeast. Just give it some time to subside and all will be well. Sometimes it will go away in 2-3 days, but if it takes a little longer don't worry. Just don't bottle it before the sulfur is gone.
