I've done a few wine kits but they've came with the numbered packets if different chemicals i.e. Potassium sorbate clearing agents and these things.

I bought a mascot 6 gallons and I pitched some champagne yeast but I'm nearing the end and I was going to stir and add Camden tablets. I'm not back sweetening so do I need potassium sorbet? Next question is can I use insiniglas then as a clear agent and 2 weeks later bottle?
 
Isinglas is made from fish bladders. You may want to advise vegans and vegetarians that your wine may not be for them.

You only need to add K-sorbate if you intend to backsweeten but you may still want to add K-meta even if you don't as K-meta inhibits oxidation.
 
Why would you make wine from Steely McBeam? (mascot vs. muscat)

And, yes k meta is the primary ingredient in Campden.
You could simply let the wine sit and clear on its own also. No need for isinglass.
